CHOCOLATE CHIP CUPCAKES
Makes 8
100g 3 1/2 ozsoft tub margarine
100g 3 1/2 oz caster sugar
2 large eggs
100g 3 1/2 oz self-raising flour
100g 3 1/2oz plain chocolate chips
Preheat the oven to 190*C/375*F/ Gas Mark 5. Put 8 muffin
paper cases in a muffin tray
Put the margarine, sugar, eggs, and flour in a large bowl and, using an electric hand whisk, beat together until smooth. Fold in the chocolate chips. Spoon the mixture into the paper cases.
Bake the cupcakes in the preheated oven for 20-25 minutes, or until well risen and golden brown. Transfer to a wire rack to cool
